Easy Homemade Breakfast: Ham & Cheese Pockets

Raise your hand if you’re the Queen (or King, sorry for excluding you fellas) of spending way too much money on breakfast? It’s way too convenient for us to grab an overpriced box of frozen breakfast sandwiches from the store, or even worse, the drive-through. In our household, budgeting became a very real thing in 2018 and one of the first “holy shiz” moments was looking at the money spent on the first meal of the day… So we decided it was time to make a change.

Easy Homemade Breakfast: Ham & Cheese Pockets

Austin uses Instagram for food and memes, and I have never been more proud to admit this. He came across one of the quick hyper-lapse videos with a recipe, well honestly he comes across these all. the. freaking. time. but we never actually make the recipes, we just drool. This time he found the video right before we went to the store for the week and we decided to give the Ham & Cheese Pockets a shot.

You’ll need: shredded cheese, eggs, tortillas, ham, non-stick spray, foil and a baking sheet (or 2).

How to make: lay the foil on your counter, spray with non stick spray, place tortilla down. Preheat your oven to 350 degrees F.

Next: lay a few slices of ham in the middle of the tortilla, sprinkle shredded cheese around the outside edges of the ham, crack and egg in the center of the shredded cheese ring. Add some more cheese on top of the egg. Fold the tortilla around the goods and then tightly wrap the foil around the tortilla pocket.

Pro tip… we used taco sized tortillas and the egg tried to spread out before we could wrap the tortilla. If calories aren’t a big deal to you, get the burrito sized tortillas to avoid the issue.

Hardest part: after you’ve wrapped up all your pockets and placed them on a baking sheet, put them in the oven for 25 minutes. Give ’em a few minutes to cool after exiting the oven- then you can eat one (because you have to taste test, duh) and throw the others in the freezer for an easy to grab breakfast.

Turkey Bacon and Cheese Pockets

Basically follow the same steps as above, but instead of ham we used 3 strips of folded turkey bacon. The baking time increases by around 5 minutes (so for those who don’t want to do the math, that’s now 30 minutes of waiting instead of 25).

Cost Effective Breakfast

Let’s break down the cost… 10 tortillas costs about $1, dozen eggs $2, bag of shredded cheese $3, package of ham $3.. and you probably already have the foil and non stick spray at your house, if you’re decent at adulting. That’s under $10 for 2 weeks of breakfast + leftover items. The more you make at one time, the cheaper they get (and the less work for you).

  • Shredded Cheese
  • Tortillas
  • Eggs
  • Ham (or Turkey Bacon)
  • Non Stick Spray + Foil

  1. Lay out foil
  2. Spray with non stick spray
  3. Place tortilla down
  4. Lay meat in the middle of tortilla
  5. Sprinkle cheese on the outer edge of meat
  6. Crack an egg in the middle of the cheese ring
  7. Sprinkle cheese on top of the egg
  8. Fold the tortilla over the cheese
  9. Wrap the tortilla in foil
  10. Bake at 350 F for 25 minutes (30 minutes if you used turkey bacon instead of ham).
  11. Freeze
  12. Reheat for around 1 min in the microwave
