Combining two my favorite things today- easy and peanut butter.
Seriously. I promise that this an easy peanut butter cookie recipe, nothing fancy. Just tasty.
I like to make a double batch, but for those of you that are okay with a smaller batch, I’ll share the recipe as I learned it. It’s pretty similar to that shared by AverieCooks (which was adapted from Reese’s Pieces Soft Peanut Butter Cookies and Peter Pan® Neverland Cookies). Enough talk. Here’s the easy peanut butter cookie recipe!
INGREDIENTS:
- 1 large egg
- 1/2 cup unsalted butter
- 1/2 cup light brown sugar, packed – my trick, just a smidge over the 1/2 recommended
- 1/4 cup granulated sugar
- 3 large spoonfuls of Peanut Butter – I’m a personal fan of Skippy Natural Peanut Butter<
- 1/2 teaspoon baking soda
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 1/2 cup semi-sweet
- 1/2 cup Reese’s Deconstructed Chips<
DIRECTIONS:
- Using a medium size mixing bowl, crack one egg and in softened butter and sugars. Cream on medium-high speed if using a mixer, or stir by hand until light and fluffy.
- The next thing you’ll do is add peanut butter and vanilla, and mix until it all looks like one batter.
- Add flour, baking soda and salt into the mix. Next you’ll want to mix lightly- or on low speed. Be sure not to over-mix. Batter should remain fluffy.
- Add chocolate chips and Reese’s chips. Use spoon to “fold” rather than heavily mix or stir.
- Roll batter into small 1-2 inch balls. Batter will yield 18-24 cookies, depending on size. Place batter balls on to large plate or tray and cover with plastic wrap. Refrigerate for 3+ hours (no longer than 5 days).
- Preheat oven to 350F. Line a baking sheet with wax paper or spray with a cooking spray. You’ll want them to bake for a good 10 minutes, maybe 11-12 depending on your over. Be sure to let the cookies cool for 10 minutes after you remove them from the over. I know you’re thinking “I don’t want to wait!” but I promise it’s needed time to let the cookies firm up!
